INGREDIENTS:
½ cup Beyond Steak® Tips
¼ cup plant-based cheese
2 tbsp chipotle aioli
2 flour tortillas 6ā
1 red onion, sliced thin
1 jalapeƱo, sliced thin wheels
1 tbsp cilantro leaves, picked fresh
1 lime, juiced
3 tbsp olive oil
2 cups vegan mayo
ā
cup chipotle chilis packed in adobo
1 tbsp red wine vinegar
1 tbsp Agave nectar
1 tbsp Lime juice, freshly squeezed
1 tsp kosher salt
1 poblano, sliced thin
1 yellow onion, sliced thin
1 red bell pepper, sliced thin
PREPARATION:
CHIPOTLE AIOLI:
1. Add all ingredients to a blender. Blend until evenly distributed. If necessary, scrape down sides and blend again to incorporate. Keep refrigerated until ready to serve.
PEPPERS & ONIONS:
1. Heat a medium to large saute pan with oil over medium-low. Add all the vegetables and caramelize slowly for 5-6 mins. You want the vegetables still a little tender. Season with salt and set aside.
