Ingredients:
*500g pumpkin
*1 tbsp olive oil
*1 small onion, very finely chopped
*2 bay leaves
*2 cloves garlic, crushed
*3 sage leaves very finely chopped
*ΒΌ nutmeg, finely grated
*salt and pepper
*25g pumpkin seeds

Method:
Preheat your oven to 200/180 degree fan. .
Chop your pumpkin into large dice, making sure you slice off the skin and scrape out the insides, and place into a large bowl, pour in one teaspoon of olive oil and using your hands, make sure each piece of pumpkin is lightly coated with oil, then tip onto a baking sheet and put into the oven for 30 minutes, making sure you turn them regularly .
