Ingredients:
*250g channa dhal lentils
*1 tbsp vegetable oil
*15 curry leaves
*1 red onion
*5 fat cloves garlic
*2 inches ginger
*salt and pepper
*1 tsp ground cumin
*1 tsp ground coriander
*½ tsp ground turmeric
*1 tbsp dried fenugreek
*5 whole cloves
*2 green cardamom pods
*pinch chilli flakes
*750mls water
*2 green finger chillies
*2 large tomatoes, roughly chopped

Raita ingredients: *½ cucumber, seeds scooped out, diced
*100g yoghurt
*1 tbsp dried mint
*salt
