SERVES: 2 servings

INGREDIENTS:
1½ cups of cooked sushi rice
3 tbsp sushi vinegar
2 Beyond Burger patties
3 tbsp low sodium soy sauce
1 tbsp dark soy sauce
3 tbsp mirin
3 tbsp sugar
4 pieces of lettuce
Japanese mayonnaise (plant-based)
Oil for frying
PREPARATION:
1. In a large bowl, with a rice paddle gently mix together sushi rice and sushi vinegar. To make each rice bun, firmly press one fourth of the rice into a ring mold onto a plate lined with plastic wrap. Repeat with the rest of the rice. Refrigerate the rice buns for at least 30 minutes so they are easier to handle.
2. Preheat oil in a non-stick pan over medium heat. Fry each rice bun until golden brown and crispy (around 5 minutes on each side). Remove and set aside.
3. In the same oiled pan, cook Beyond Burger patties for 4 minutes on each side or until cooked through. Remove from heat.
