Nutty roasted vegetables, warm, earthy spices, and a bright tangy sauce make this Roasted Cauliflower with Mint Yogurt the perfect meal. Serve it on it’s own or your favorite grains. Enjoy!
Ingredients
1 medium head of cauliflower
1 can of chickpeas drained and rinsed
1 bunch of radishes cleaned and washed well
1/2 cup olive oil
1 tbsp salt
1/2 tsp paprika
1/2 tsp turmeric
1/2 tsp curry powder
Yogurt sauce
1 cup plain yogurt
1 handful of fresh mint
1 handful of fresh cilantro
2 tbsp lemon juice
1 garlic clove
1/2 “ fresh ginger
Pinch of salt
2 tbsp water if needed
Instructions
Preheat oven at 400F degrees
Cut the cauliflower in florets.
Cut the radishes in quarters
Transfer vegetables in a baking sheet pan.
In a bowl whisk together, olive oil, salt and all the spices
Drizzle the mixture over the veggies and bake in the oven for 20-25 minutes.
In the meantime in a blender combine all ingredients for the dressing.
