Here’s the quiche I made yesterday. Super simple, extremely healthy and satisfying 🤤
Store purchased pie crusts
2 Silken Tofu blocks, drained well
1 Bag frozen Spinach, defrosted and drained well
2 Cups fresh Spinach
2 Cups fresh Parsley
1 large bunch Chives
1 tsp Garlic Powder
1/2 tsp White Pepper
1 tsp Pink Sea Salt
3-4 Tbsp Arrowroot powder
Drain the tofu and spinach for a few hours. Squeeze out as much liquid as possible. Blend all ingredients till all is smooth and then split blended ingredients into two pie crusts.
I topped these 2 with Everything bagel seasoning. Made them a little garlicky, but also pretty delicious.
Bake on 350 for 45-55 minutes. Let cool before cutting.
