Tired of blah oatmeal? I’m gonna change your life with this savory oats recipe! I was in an oatmeal funk, so I started doing savory oats instead of sweet, and it has been SO good! Here’s how I make them, but the beauty is that you can add whatever toppings you like!
👩🏼🍳 My Recipe:
Step 1 (I do this the night before): Make your base.
1. Chop 1 large sweet potato into small cubes, about 1/2in thick
2. If using an Insta Pot, combine sweet potato chunks with 2c steel-cut oats and 2.5c water or chicken stock or vegetable stock (stock gives it another flavor dimension). Cook on high pressure for 6 min.
3. If using a pan on the stove, add 2c steel-cut oat, chopped potato, and 5c water or stock. Bring to a boil then simmer for 30 min.
4. In the morning scoop out your oats/sweet potato mixture into a bowl (I use about a cup) and heat in the microwave (or stovetop).
