First time doing this, and Iād say it was a miss overall (the very center was too rare)but Ill get it next time! Trying to balance cooking the center through without overdoing the ends. Having said that, I was pretty happy with everywhere but the center.

Salt brined for 12 hours in gustusvitae then smoked on the campchef at 160 for 45 mins. Next time Iāll smoke at 200! Then it went into the lococookers fryer for 4 mins at about 400. Next time Iāll do 5 mins in the fryer!! Overall the flavor was unreal and the crust was without a doubt the best Iāve ever had šÆ just gotta mail the texture and timeā¦gonna have to have maxthemeatguy help me out wit this oneā¦.
