Tongue pastrami you my best friend πŸ”₯ This is my 3rd time doing this and got damn is it good! Took this tongue from black_hawk_farms and bathed it in a classic pastrami brine for 5 days! From there, I boiled it with carrots, onions, celery, garlic and bay leaves until it was tender! I then removed the out layer of skin, seasoned it with kosmosq and gustusvitae before smoking it to perfection on the biggreenegg πŸ™ŒπŸΎ The end result was sinfully and ridiculously delicious 🀀 see below for brine recipe πŸ‘‡πŸΎ . Brine: 6 1/3 pints of water 9 1/2 oz of salt 1 1/16 oz of pink salt 1 tbsp of peppercorns 1 tbsp of coriander seeds 1 tsp fennel seeds 1 tsp garlic powder 7 1/16 oz of brown sugar . I have done it with traditional pastrami seasoning on the outside along with another combo. Whatever rub/ spice blend you use, avoid anything salt heavy as the brine has already done that for you! Also, get creative with herbs or whatever in the brine, but don’t adjust the salt! I would have done this 4 ti...
