Got this elk backstrap from budscustommeat and seasoned it in gustusvitae “FPP” and kosmos.q “cow cover”. Smoked it on the webergrills smokefire. The IT was 109 when I took it off to rest. Seared it in my stargazercastiron then rested it on my thebullswood board. When I removed it from the cast iron it was 120 degrees. Let it rest 10 more mins.
