black_hawk_farms brisket rubbed in kosmos.q cow cover and Texas beef... cooked at 225 for about 10 hours and 300 for 2 hours. Rested for 1.5 hours before slicing. This is just one of the ways I do brisket. Sometimes I don’t wrap, sometimes I do butcher paper, and more often than not@I do them on my pit barrel. But, I enjoy the process and trying to improve non all smokers using all variations of methods. People always ask me for brisket advice and I’ll say this: Don’t rush it, don’t rely on temperature 😌and most importantly DO WHAT WORKS FOR YOU 💯
