Rivka Campbell’s Rice and Peas
1.5 cups dried kidney beans or grungo peas (pigeon beans) or a large can of drained kidney beans
1 13.5 oz can coconut milk
Enough water combined with coconut milk to yield 4 cups of liquid
3 cloves of garlic, chopped
2 scallions or a small onion, chopped
5 pimiento seeds (allspice) or ½ tsp allspice (if using whole seeds, remove after cooking)
Black pepper and salt to taste
5-6 sprigs of thyme
1 scotch bonnet pepper, whole (be careful not to pierce it to avoid the whole pot being too spicy)
2 cups long-grain rice, rinsed and rained until water runs clear
1. Rinse and soak the beans or peas overnight and drain; then boil 1-1 ½ hours, until soft.
