These delicious caramel cupcakes are my recent favorite😍 Cupcake 2 eggs 1/2 cup vegetable oil 1/2 cup buttermilk 1 cup all purpose flour 1 cup sugar 1/3 dark process cacao powder 1 tsp baking powder Frosting 4 oz (220 gr mascorpone or cream cheese) 1/3 cup heavy whipping cream 1/3 cup caramel sauce 1/2 cup powdered sugar Caramel sauce 1 cup sugar 6 tablespoons butter, room temperature 1/2 cup heavy whipping cream 1/2 tsp (optional) In a heavy bottomed sauce pan, heat the sugar on medium low heat until its completely melted, stir occasionally. Keep an eye on it to make sure it does not burn. Once sugar is melted, remove from heat immediately and stir in the butter. It will be bubble. Pour in the heavy cream and sea salt. Stir until everything is combined.Pour into small bowl or cup and allow to cool completely before using. Preheat oven to 350 degrees. Line one standard size cupcake pan with 11 liners, set aside.
