Pie crust
2 cup flour
1+1/2 stick cold butter
5 tbsp cold water
1/3 cup sugar
1 egg white ,to brush inside crust
Pie filling
15 oz pumpkin purée
3/4 cup evaporated milk
1/2 cup light brown sugar
1/4 cup granulated sugar
2 eggs+1 egg yolk
2 tsp pumpkin spice
1 tsp vanilla extract
Make the pie crust with a food processor: Place flour, sugar, and butter in a food processor and pulse 4-5 times. Pea-sized butter flakes should still be visible. Add water at the time and pulse 1-2 times after every tablespoon. Stop adding water when the dough starts to clump.
Cover the crust tightly with plastic wrap and refrigerate at least 1 hour.
