Seared scallops 🔥 Sea marshmallows are one of my favorite foods in the worlds! From the taste to the texture it checks all boxes. Keep it simple and you can’t go wrong 💯 My tips for scallops are below 👇🏾

1️⃣ The BIGGER the better! If you can, grab U10 scallops. If you’re in Vallejo, soultrans_seafood got you!
2️⃣ Make sure your scallops are dry! I like to let them sit between two towels in the fridge for a couple hours or on a rack uncovered overnight. PAT YOUR SCALLOPS DRY BEFORE SEASONING AND COOKING!
3️⃣ Season them with salt and pepper only right before cooking. If you salt them too soon, you’ll draw out moisture and ruin your sear.
4️⃣ Use a high heat oil (grape seed is my favorite) and a non stick pan (give yourself all the help you can).
