Strawberry shrimp ceviche
Serving 6-8
Ingredients
1 lb raw shrimp, medium to large, cut into bite sized pieces( if you cannot have raw shrimp, dip it in boiling water for 2-3 minutes)
1 cup freshly squeezed lime juice
1/2 red onion, diced
1 jalapeno, seeds removed, finely chopped
1 cup chopped fresh cilantro
1 english cucumber diced
2 cup fresh strawberries diced
salt to taste
Tortillas, tortilla chips, or tostada shells for serving
Instructions
Add all of the ingredients to a large glass or ceramic bowl.
Stir to combine and make sure the citrus juices cover the shrimp.
Allow to refrigerate for at least 1 hours
Serve with tortilla chips, or tostada shells.
