One of the best things about the creative process of a dish are the textures, aromas and colors the Chef experiences when cooking. When doing research for a new dish, trying new technics, or old technics applied to new ingredients, a Chef gets to be submerged in this beautiful world of chemistry, physics, temperatures, happiness, and sometimes sadness or anger. Usually it takes at least 10 tries to make a dish right, sometimes days, weeks or months. But the search never stops…
This fantasy world, that knows no hours, no day or night, just the research for perfection, for beauty and for flavors, is sometimes a secret. That secret stays between those who choose to live in it. This crazy land stays behind doors and the guest doesn’t get to see, feel or taste the little moments that happen before a dish is ready to make it on the menu.
