Pink Beet Hummus — perfect for Valentine’s Day! I took all the tips I could find online for a creamy hummus that is easy to make at home, and after a bit of testing, I was able to put together this recipe. You probably noticed I boiled canned chickpeas and threw in some ice cubes. Read the recipe below for more! 👀
✨Ingredients:
•1 can of chickpeas
•1/2 tbsp baking soda
•1 1/2 lemons, juiced
•1/2 cup tahini
•1 tsp flakey salt
•3-6 ice cubes
•2 tbsp extra virgin olive oil (used cold pressed if possible!)
•1 small cooked beet
•crispy chickpeas, extra EVOO, & paprika for garnishing
In a medium saucepan, add chickpeas, water, and baking soda and bring to a boil. Reduce heat and simmer for 20 minutes until the chickpeas look mushy. Rinse and drain. Add chickpeas to a food processor or blender, and add lemon juice, salt, ice cubes, and olive oil. The ice cubes will help the hummus become creamy. Blend on high speed for 2 minutes, scrape the sides, and repeat as necessary. ...
