Mexican Chocolate Zucchini Muffins
Ingredients:
1 Zucchini (shredded)
Pinch of Salt
5 Eggs (room temp)
2 cups Almond Flour
1/4 cup Unsweetned Cocoa Powder
1/2 tsp. Baking Powder
1tsp. Cinnamon originenaturals
1/3 cup Chocolate Syrup rxsugar (code KETOWIZZARD20 )
1/4 cup Avocado Oil chosenfoods
1/2 cup Chocolate Avinola avi_foods_co
3oz Hot Cinnamon Chocolate skinnymechocolates
Directions:
PREHEAT OVEN TO 350°F
1. Shred your zucchini. Place in a colander and lightly salt it. Let it sit while you prepare the mixture.
2. Whisk together your almond flour, cocoa powder, baking powder, and cinnamon.
3. Whisk in your chocolate syrup, avocado oil, and eggs.
4. Grate (or chop) half of your bar of chocolate, and add it to your mixture along with the Zucchini and Avinola.
5. Place in silicone molds, or you can make a loaf. Use parchment for a loaf.
