INGREDIENTS
Greek Skewers:
2 lbs. chicken thighs, boneless, skinless
2 lemons, sliced into ¼” circles
1 red onion, large, cut into 1” pieces
2 zucchini or summer squash, cut into ½” circles
4 Tbsp. extra virgin olive oil, divided
2 Tbsp. lemon juice
1 Tbsp. lemon zest
2 tsp. oregano, dried
1 tsp. basil, dried
1 tsp. thyme, dried
3 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
Cherry tomatoes, sliced cucumbers, feta cheese for garnish
Citrus Rice:
