INGREDIENTS
1 cup of Lundberg Organic Tri-Color Quinoa
2 cups of vegetable broth
2 ears of roasted corn, kernels cut off cob or 1 cup frozen corn
1 red bell pepper, roasted and chopped
1 (15 oz.) can of black beans or soybeans, rinsed and drained
3 scallions, sliced
1/2 cup chopped cilantro (Pantry Friendly: 4 Tbsp. dried cilantro)
Juices of 3 limes
2 Tbsp. extra-virgin olive oil
1 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. fresh ground black pepper
1/8 tsp. cayenne pepper
