Lamingtons 🥥🍰 a classic Australian/NZ teatime dessert. I grew up eating these all the time and decided to make some at home since you cannot find them here in the US! The closest thing here would probably be a zinger, but the homemade version is 100 times better! 😍
LAMINGTONS
Sponge Cake
4 eggs, separated
1/2 cup granulated sugar
3/4 cup cake flour
pinch of salt
3 tbsp vegetable oil
1 tbsp vanilla extract
Toppings
1 box raspberry jello powder
2 cups water
1/2 cup chocolate chips
1/2 cup heavy cream
Unsweetened coconut
Whipped cream and raspberry jam (optional)
Preheat the oven to 320F. Beat the egg whites in a large mixing bowl with an electric mixer, until fluffy.
Gradually pour in the sugar while whisking, beat until stiff peaks have formed. They will stand straight up without curling over when the whisk is pulled out of the bowl.
Whisk together the egg yolks and salt in a separate bowl, then gradually pour into the beaten meringue.
