ST PADDY’S CUPCAKES 🍀

Adding SCOTCHMALLOWS to the cupcakes created gooey pockets of marshmallowy/minty goodness! You have to try these to fully appreciate how amazing it tasted!
MINT CHOCOLATE CUPCAKES
-2 large eggs, room temp
-1/2 cup sour cream, room temp
-1/4 cup vegetable oil
-2 tsp vanilla extract
-1/2 cup hot water
-1 1/4 cups sugar
-1 1/4 cups flour, sifted
-1 tsp baking soda
-1/2 tsp baking powder
-1/2 tsp salt
-1/2 cup cocoa powder, sifted
-1 box SEE’S DARK MINT SCOTCHMALLOWS, chopped
-SEE’S DARK CHOCOLATE SHAMROCKS
-Vanilla Buttercream tinted green
Preheat the oven to 350F and line a cupcake tray with cupcake liners. Place the eggs, sour cream, oil, vanilla, and hot water into a large mixing bowl. Whisk until combined.
