2 large Granny Smith Apples, diced

11⁄2 cups (338 g) dark brown sugar
1 cup (200g) granulated sugar
4 large Egglands Best eggs, at room temperature
1⁄2 cup (120 ml) sour cream, room temperature
1 tbsp (15 ml) pure vanilla extract 21⁄2 tsp baking powder
11⁄2 tsp baking soda
2 tsp ground cinnamon
11/2 tsp apple pie spice
