These veggie grinders are the summer sandwich I've been making on repeat. 😍 The hearty roll is toasted and topped with melty mozzarella and provolone, then piled high with lettuce and tomato for a satisfying sandwich that only takes minutes to make! The dressing on the lettuce is so good, that I've been making extra salad topping and eating it on the side!

Ingredients
2 hoagie rolls (about 8″ each)
4 slices provolone
1/2 cup shredded mozzarella
2 tablespoons mayonnaise
1 tablespoon red wine vinegar
1/2 teaspoon oregano
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 tablespoon chopped pepperoncini
Pinch crushed red pepper flakes
Pinch of salt
1 head romaine, thinly sliced
1 large tomato, thinly sliced

Instructions
Preheat oven to 375 degrees.
Slice the grinder rolls in half and top with provolone and mozzarella.
Bake the grinder in the oven for 7-9 minutes or until the cheese is melted.
