These buffalo chickpea tacos are only SIX ingredients. Talk about a quick meal- this one couldn't be easier! Oh, did I mention they're vegan? đ

Here's what you'll need:
1 15oz can chickpeas, rinsed and drained
1/2 teaspoons cumin
2 tablespoons buffalo sauce, plus more for drizzling
1/4 teaspoon salt (or to taste)
1/2 cup lettuce or cabbage
4 flour or corn tortillas
2 tablespoons ranch dressing (optional)

Instructions
Preheat oven to 350 degrees
Combine the chickpeas, cumin, hot sauce, and salt in a small bowl. Stir until the chickpeas are evenly coated.
Cover a baking sheet with parchment paper or spray with non-stick spray. Spread the chickpeas in an even layer.
Roast the chickpeas for 10 minutes, then stir and continue roasting for 5-10 minutes until browned.
Divide into tortillas and top with lettuce and a drizzle of ranch dressing. You could also add avocado, shredded cabbage, or salsa!
