Ever since my chickpea cookie recipe I’ve been shocked at how well chickpeas can hide in dessert. 😉 These we’re a fun one to make!

Ingredients:
1 15oz can chickpeas, drained but with liquid reserved
2 tablespoons liquid from the can
3 tablespoons coconut oil melted
2 teaspoons vanilla
1/2 cup creamy peanut butter
2/3 cup brown sugar
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup chocolate chips
Instructions
Preheat oven to 360 degrees.
Line an 8×8 baking pan with parchment paper and set aside.
Add the chickpeas and 2 tablespoons of the chickpea liquid into a food processor.
Blend until smooth.
Add the peanut butter, melted coconut oil, and vanilla and continue to blend.
Add the brown sugar, cocoa powder, baking powder, and salt and blend until combined.
Stir in the chocolate chips.
