INGREDIENTS
6 oz roasted red pepper (about 1 large pepper) (I get the jarred kind but you could roast your own if you're feeling ambitious!)
ΒΌ cup slivered raw almonds
6 cloves garlic
ΒΌ cup olive oil
1 tablespoon red wine vinegar
ΒΌ teaspoon paprika
ΒΌ teaspoon salt

Instructions
To make the sauce, combine the roasted red pepper, almonds, garlic, olive oil, red wine vinegar, paprika, and salt in a food processor or blender.
Blend until just slightly chunky.
Drizzle over roasted vegetables.
