Hot smoked at 300° using hickory wood and the kamadojoe slo roller to keep the heat distribution on point. It results in a perfect skin that is crisp and not rubbery. Cooked about an hour and a half with meatermade making it easy. Didn’t peek one time and did a bunch of house chores until my phone went off. Easy weekday dinner.
