CASHEW SPINACH PESTO🌱
Pasta al Pesto is one of the easiest pastas to make! All you have to do is boil pasta and put everything in a blender — easy peasy. And it can easily be made *vegan*.
I make mine using spinach and cashews to make it a little more affordable! The taste is almost the same as classic pesto and I get to make huge batches and freeze them for later.
✨Ingredients:
•1/2 cup - 1 cup basil
•2 cups spinach
•1/3 cup raw cashews —> 1/2 if making *vegan*
•1/4 cup parmigiano reggiano *skip if vegan*
•3/4 - 1 cup extra virgin olive oil
•1 tsp minced garlic
•1 tbsp sea salt
•1 lb pasta
In a blender or food processor, combine basil, spinach, cashews, parmigiano, EVOO, garlic, and sea salt. Blend until forming a paste, add more olive oil for a thinner consistency. Cook pasta in salted water following the instructions on the package until reaching an al dente consistency. Before draining, save a cup of pasta water for the pesto.
