Pasta al Pesto🌱 🍝I made my dad’s pesto recipe and gave it my own spin by adding a burrata on top. Pesto is so easy to make and so freaking flavorful!!! I used mafaldine pasta, which kinda looks like lasagna noodles turned into spaghetti, but you can use any pasta shape. ✨Ingredients: •50 gr of fresh basil leaves •3 tablespoons pine nuts •1 cup pecorino romano •1 1/2 cup parmigiano reggiano •2 garlic cloves •1/2 cup extra virgin olive oil •1-2 teaspoon coarse sea salt •1 lb pasta •1 fresh burrata Fill a large pot with salted water and boil. In a food processor, combine basil, pine nuts, pecorino, parmigiano, EVOO, and salt at high speed until forming a puree. Cook pasta until al dente, save a cup of pasta water, and drain. Place drained pasta back into pot and pour pesto sauce on top, mix until fully combined. Add pasta water, as necessary, until reaching the perfect consistency. Serve on a plate, grate more pecorino on top, and garnish with a fresh burrata. . . . . — #pasta #mafa...
