These Grilled Shrimp & Scallop Po’ Boys from harrisondtran are the perfect appetizer this season!
Ingredients
• 18 shrimp, peeled and de-veined
• 18 scallops
• 1/2 medium onion, roughly chopped
• Marinade:
• 2 tbsp paprika
• 1 tbsp onion powder
• 1 tbsp garlic powder
• 2 tsp salt
• 1 tsp dried basil
• 1 tsp black pepper
• 1 tsp cayenne pepper
• 1/2 lemon, squeezed
• 1 tsp sugar
• 3 cups iceberg lettuce, chopped
• 6 baguettes
• 6 tbsp remoulade sauce
Instructions
• Mix shrimp, scallops, onion, and marinade in a bowl.
• Add 3 shrimps, 3 scallops, and 6 onion pieces to each skewer.
• Oil grill grate and pre-heat grill to 400° F with lid closed.
• Add skewers to grill and sear with lid closed for 3 minutes.
• Briefly open grill to flip skewers then close again for 3 minutes.
• Assemble po’ boys with remaining ingredients and skewers.
• Enjoy on a sunny summer day!
