I love this slow cooker quinoa chili because you literally just dump everything in the pot and turn it on. That’s IT. It’s delicious, packed with plenty of plant based protein and it’s also made with mostly canned goods so it’s an easy one to make when your fridge is looking a little empty. (Did I mention it’s also budget friendly? 🙌)

Ingredients
1 cup uncooked quinoa, rinsed
1 15oz can black beans, drained and rinsed
1 15oz can pinto beans, drained and rinsed
1 15oz can fire-roasted tomatoes
1 10oz can diced tomatoes with green chilies
1 1/2 cups corn (frozen or canned is fine)
1 teaspoon cumin
1 teaspoon oregano
1/4 teaspoon cayenne
3 cups of low sodium vegetable broth
Generously salt to taste

Instructions
Add everything into a large slow cooker and stir.
Cook on high for 3 hours.
