Ingredients:
š 1 (9-ounce) package of fresh spinach pasta
š 1 tablespoon extra-virgin olive oil
š 4 ounces diced pancetta
š 1 (16-ounce) package of frozen baby lima beans, thawed
š 1 cup sliced shallots
š 2 cloves garlic, minced
š ½ teaspoon dried rosemary
š 4 cups baby spinach
š 3 tablespoons lemon juice
š ¾ cup grated pecorino cheese, divided
Directions:
Cook Pasta: Boil pasta according to package directions. Reserve 1 cup of pasta water, then drain.
