An “I don’t feel like cooking” dinner. Chakalaka recipe: Really cool South African side (incredible with grilled meat) that’s quick and easy to make. - 2 yellow onions diced - 2 bell peppers diced (I used red and yellow) - 2 cloves minced garlic - 3 carrots peeled and grated - 3 tomatoes diced (I used tomatoes on the vine) - 16oz can of Cannellini beans - 12oz of strained tomatoes (I used Pomi brand, thick sauce like consistency) - 1/4 cup apple cider vinegar - 1/4 cup light brown sugar - 2 tbsp curry powder - 2 bay leaves - 1 handful of cilantro - 1 pinch of salt Cook the onions first in extra virgin olive oil for 3 minutes then add the peppers and garlic. Add a good sized pinch of salt here. Cook for 2-3 minutes. Add in the carrots, tomatoes, brown sugar, apple cider vinegar, curry powder and bay leaves and simmer for around 10 minutes stirring frequently. Add in the strained tomatoes and mix well cooking for 2 minutes or so, then add the beans and cilantro. Good to go! Tan...
