Cosmic Brownie Ice-cream Sandwiches 🍫 the best summer treat and SO easy to make! Honestly brownies are my weakness- especially paired with icecream! 😍 Ingredients: 2 boxes brownie mix 1 cup vegetable oil 2/3 cup water 2 eggs 1 cup chocolate chips 1/2 cup heavy cream Rainbow chips Chocolate ice-cream 1. Combine the brownie mix, oil, water, and eggs in a large mixing bowl. Divide between two square pans and bake for about 30 minutes at 350F. Allow to cool completely. 2. Leave one of the brownie layers in the pan, then scoop on a layer of ice-cream and smooth with a rubber spatula. Place the second layer of brownies on top and freeze overnight. 3. To make the chocolate ganache topping, combine the chocolate chips and heavy cream in a bowl and microwave for 30 second bursts until melted. 4.
