Acorn squash rice with nutmeg & toasted herbs. A recipe that I’m insanely proud of, mostly because I feel like I owe you a low-effort, high-comfort recipe for the times when you do want to cook…but not too much 🍂
This rice took me one too many tries, and it perfectly toes the line of Arroz Caldoso (Spain’s brothy rice) and a squash risotto, although I’ll be honest, it captures the technique of neither.
It is designed to be a medium-effort recipe, relying on blending together your veg, toasted herbs, spices and aromatics and cooking your rice just until there is the perfect amount of water left to bring everything together.
