16 oz fresh gnocchi
3 cloves garlic
½ cup basil leaves
½ cup parsley
¼ cup pine nuts
2 tbsp olive oil
¾ cup NotCo Milk
½ tsp salt
¼ cup Non-dairy Parmesan cheese
Instructions
Cook the gnocchi as directed on package or until tender.
Add the garlic, basil, parsley, pine nuts, and oil to a blender or food processor. Pulse until very fine. Add the milk and parmesan and pulse until mixed well.
Add the mixture to a pan over low heat and stir until simmering slightly.
Add the gnocchi and any additional cheese. Stir and serve immediately. Enjoy!
