You start by making Birria de Res, a Mexican stewed beef. It's actually made with goat in Jalisco, but we are using beef today!
Birria de Res is made by browning beef, then making a chile sauce from dried chiles, tomatoes, spices, onions, and garlic. It's a lot of ingredients, but it honestly can put put together in about 20 minutes.
The magic happens when you pour the sauce over the beef and bake it for 3 hours! What comes out is super tender, fall apart beef, in a spicy flavorful sauce.
