Orange cranberry torte based on Marian Burros classic plum torte recipe. A little tart, a little sweet and orangey this combo is a winner on my list. Enjoy!
2 eggs
1 cup sugar
1/2 cup melted butter
1 tsp vanilla
Pinch of salt
1 tbsp orange zest
1/4 cup orange juice
1 cup flour
1 tsp baking powder
1 1/2 cup fresh cranberries
Preheat oven at 350F
In a medium bowl start whisking eggs with sugar until it turn pale and foamy and sugar dissolves
Incorporate melted butter, vanilla, orange zest and orange juice.
Add flour and baking powder and whisk until everything is incorporated.
Pour batter into an 8x8 inch lined baking pan or use a spring form.
Add cranberries over the batter and sprinkle with sugar!
Bake for 35 minutes or until the knife comes out clean.
