Another squash recipe my friends! This time using roasted Delicata squash over a bed of lacinato kale, pepitas, and an easy tahini dressing! Pom arils for a festive look! . For 2 servings . . 3 cups Lacinato kale thinly sliced 1 Delicata squash 2 tbsp pepitas 2 tbsp pomegranate arils . Tahini dressing . . 2 tbsp of tahini 2 tbsp Lemon juice 1/3 cup Olive oil Salt and black pepper Water as needed to achieve the right thickness. . . . Massage kale with olive oil to soften. Keep it on the fridge while you roast the squash. Cut the squash, scoop seeds out. Drizzle with olive and season. Roast on 400F degree about 15 minutes. Build your salad with kale, squash, pepitas, pom arils and drizzle tahini dressing over the salad! Perfect with any meal!
