I’m still in August mode mentally. I love eggplant Baba Ghanoush, but this zucchini Baba Ghanoush is a great way to use extra zucchinis and it’s delicious. Happy Friday!😍

3 -4 medium zucchinis
Juice from 1 lemon
2 tbsp tahini
3 garlic cloves grated
2 tbsp Fresh chives and dill chopped
Salt and black pepper to taste
2 tbsp toasted pines
3 tbsp crumbled feta
2 tbsp olive oil
Preheat oven at 425F degrees
Place zucchinis on a baking pan.
Spray some oil over the zucchinis
Roast for 30-40 minutes or you can charr them on a grill or stove top.
Let it cool before removing the skin.
Place the flesh into a strainer to drain extra water.
In a bowl add zucchini, tahini, garlic,lemon juice, salt and black pepper and herbs. Just mash using a fork for a creamy but yet chunky texture. Feel free to use a blender.
Spread onto a plate and add crumbled feta, toasted pine nuts and olive oil.
Enjoy with crusty bread or pita.
