A little reminder that this zucchini and goat cheese tart on puff pastry it’s perfect for any summer weeknight dinner. This tart can be assembled in 10 minutes and makes a great quick delicious meal.

Puff pastry
2-3 zucchinis sliced thinly
1 log of goat cheese 8 oz
Lemon zest
2 tbsp of olive oil
1 tbsp of Dijon mustard
Chopped fresh basil
Salt and black pepper
Pine nuts

In a bowl mix the goat cheese (room temperature) with mustard, olive oil, basil. Score 1” around the puff pastry. Preheat oven at 350F. Spread cheese mixture into the puff pastry. Arrange zucchinis on top. Drizzle olive oil and season. Sprinkle with pine nuts! Bake for 30 minutes or until the crust is golden brown! Enjoy!
