Simple roasted leeks. Leek is such a great vegetable and I grew up eating leeks all winter long. Unfortunately they are not used very much in American cuisine and they are pricey. Just sharing this super simple yet fancy looking side dish that I prepared during Holidays, roasted leeks with vinaigrette. The salmon caviar is optional. But it looked so pretty over the leeks.

3-4 leeks white part
Olive oil
Salt and black pepper

Vinaigrette

1 tbsp Dijon mustard
3 tbsp olive oil
2 tbsp red wine vinegar
Pinch of salt
Black pepper

Cut leeks in half lengthwise. To clean them use a shallow pan with water and dip them. Pat dry! Preheat oven at 400F. Place leeks in a baking dish. Drizzle olive oil on both sides. Place them cut side down on the baking dish. Bake for 20 minutes. Remove from the oven and turn so the cut side is up. Prepare vinaigrette with the above ingredients.
