One of my favorite desserts but with pumpkin. You probably guessed it is a pumpkin tiramisu. Not a classic as it does not involve eggs. Super fluffy, filked with warm spices and super simple to assemble. You can make it ahead of time and it’s good for a couple of days on the fridge if it will last. πŸŽƒπŸπŸ‚ . . . For an 8x8 square pan or oval dish. . 1 package 7 oz of lady fingers cookies 2 cups heavy cream 8 oz mascarpone 1/2 cup powdered sugar 1/2 cup pumpkin puree 2 tsp of pumpkin spice divided 2 cups of coffee Cocoa powder . . . In a medium bowl whisk, mascarpone cheese, pumpkin puree sugar and pumpkin spice. Add whipped cream and fold until well combined. Pour coffee in a bowl and add 1 tsp if pumpkin spice to the coffee. Let the fun begin. Dip ladyfinger onto coffee and start layering tiramisu with one layer of cookies followed by the pumpkin cream. Finish with a layer of fluffy cream and sprinkle with cocoa powder. Refrigerate overnight and enjoy! Have an amazing weekend everyone...
