Roasted whole cauliflower tandoori style. Perfect meatless Monday meal. Super easy, and Oh Boy so delicious!I have made chicken tandoori many times. But cauliflower tasted truly amazing. Beautiful tender roasted cauli with amazing flavor from all the spices.

1 medium cauliflower
1 cup of yogurt
Salt and black pepper
Lemon juice
3-4 garlic cloves
Fresh ginger grated
1 tsp Cumin
1 tsp of Turmeric
1 tbsp of garam masala mix

In a bowl combine all ingredients for the marinade. Clean the cauliflower from the stems. Pour the mixture all over and use your hands to cover it completely. I baked mine on a dutch oven pan covered with on 300F degree for one hour and uncovered for another 20 minutes. Serve with a mix of yogurt with lime and fresh herbs (mint and parsley) Some fresh homemade naan would’ve been perfect!
