Ingredients
2 lb pork country style ribs boneless cubed
1 lb baby potatoes halved
1 red bell pepper sliced
1 medium red onion sliced
1 package of grape tomatoes or other variety
1 cup Feta cheese cubed
1 cup kalamata olives
1 tbsp fresh dill chopped to serve
For the marinade
1/4 cup olive oil
3 tbsp lemon juice (1 lemon)
1 tbsp Dijon mustard
3-4 garlic cloves grated
1 tbsp salt
1/2 tsp black pepper
1 tbsp dry oregano
1 tsp paprika
Instructions
Preheat oven to 425F degrees.
In a bowl whisk all ingredients for the marinade. Pour half of the marinade into the cubed pork. Combine well massaging the meat and refrigerate for at least 30 minutes.
Spread the rest of the marinade over the baby potatoes and peppers and onions....
