Ingredients
- 2 large eggs
- 1/2 cup sugar
- 1 cup flour
- 1/2 tsp baking powder
- 1/4 cup pumpkin puree
- 1 tsp pumpkin spice
- 1/2 cup (or 1 stick) brown butter
- Powdered sugar (for sprinkling)
Instructions
1. In a mixing bowl, whisk the eggs and sugar together until the mixture becomes light and frothy.
2. Gently fold in the flour and baking powder until just combined.
3. Add the pumpkin puree and pumpkin spice, mixing until fully incorporated.
4. Slowly pour in the brown butter, folding it into the batter.
5. Cover the dough and chill it in the fridge for 1 hour.
6. Preheat your oven to 400°F (200°C).
7. Grease your madeleine pan and dust with flour, then spoon the chilled batter into the molds.
8. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
