Fun fact: While polenta is typically a coarser grind, it can really be made with most cornmeal. Many bags in the US are actually labeled as both grits & polenta! Polenta originated in Italy and is essentially a creamy cornmeal porridge that can be served soft or allowed to set and then grilled or fried.
