HIGH PROTEIN PUMPKIN BREAD 🎃🧡
This pumpkin bread is so delicious, easy to make and healthy enough to eat for breakfast!
Ingredients:
- 2 cups oats
- 1/2 cup promix vanilla protein powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
- 1 + 1/2 cups pumpkin puree
- 2 eggs
- 1/4 cup maple syrup
- 1/3 cup milk (any type)
- 2 tsp vanilla extract
- 1/4 cup chocolate chips
How to:
- Preheat oven to 350F. Grease or line a loaf pan, 8x8 pan or muffin tin (cooking times for each below!)
- Blend the oats to make oat flour, then add it to a big bowl with protein powder, baking soda, baking powder, salt and pumpkin pie spice. Stir to combine.
- In a second bowl whisk together pumpkin puree, eggs, maple syrup, milk and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combine. Stir in chocolate chips.
